  • One (1) package of Brickell Micro Farms’ microgreens, Crunchy Mix.
  • A half-cup (1/2) of fresh blueberries.
  • Two (2) teaspoons of a sunflower-and-pumpkin seed mixture.
  • One (1) ear of roasted corn (cut-off).
  • Two (2) cups of chopped leafy green lettuce.
  • Two (2) finely sliced breakfast radishes.


  • Two (2) tablespoons of extra virgin olive oil.
  • One (1) tablespoon of white wine vinegar.
  • One (1) clove of finely minced garlic.
  • One (1) tablespoon of chopped Spanish capers.
  • One (1) tablespoon of lightly chopped fresh mint leaves.
  • Sea salt to taste.
  • Black pepper to taste.


  • Thoroughly rinse and dry the microgreens, then set them aside.
  • In a small mixing bowl combine olive oil, white wine vinegar, mint, garlic, chopped caper, as well as salt and pepper to taste.
  • Thoroughly rinse, dry, and finely chop leafy lettuce.
  • Using a serrated knife cut the kernels of roasted corn off the cob.
  • Assemble the salad by combining the microgreens, lettuce, corn, blueberries, and seeds in a large bowl.
  • Add the salad dressing, toss well, and serve immediately.
